Emerald Strawberry is a visually striking variety prized for its dramatic colour contrast: the exterior remains bright green even at full ripeness, while the interior reveals vivid, deep-red flesh reminiscent of a ripe strawberry. The flavour is sweet and bright, with a subtle fruity acidity that makes it one of the more refreshing figs to eat fresh. It is a conversation piece in any collection.

Growing Notes

• Green skin at ripeness means colour is not a reliable harvest indicator — judge by softness and a downward bend of the neck.
• Needs full sun to develop the vivid red interior; shade-grown fruit is less colourful and less sweet.
• Moderate vigour; suitable for container growing.
• Protect from rain near harvest — the skin can crack in wet conditions.
• Cold hardiness moderate; best overwintered in containers in colder regions.

My Notes

Grown purely as a novelty at first, but the flavour genuinely surprised me — brighter and more refreshing than the standard jammy varieties. The green-exterior, red-interior reveal is always a crowd-pleaser.
