Raasti — aptly nicknamed "Iranian Candy" — is an Iranian variety celebrated for a sugar content that rivals any fig in cultivation. The figs are small to medium with pale greenish-yellow skin and light amber flesh that is extraordinarily sweet, almost candy-like in intensity. Iran has one of the world's oldest traditions of fig cultivation, and Raasti represents the pinnacle of that heritage. The sweetness can seem almost unreal fresh off the tree in a good year.

My Notes
The sweetness on a hot year is genuinely shocking — like eating a fig that has been drizzled with honey. I reduce watering to almost nothing in the final weeks before harvest and the effect on sugar concentration is dramatic.
